Crushed Yellow Lentils - Mujaddara Safra

The one-pot irony meal - aka rich in Iron. My mom used to cook it for me whenever my Iron levels down. We can serve it with the usual green salad or some pickles for sour lovers. Yellow lentils meal is also for lazy cooks. Do not be surprised by the time it needs to be done! Look at the way. Check the notes for additional tips.

Soak lentils 45 minutes
Total Time 1 hour 15 minutes

Equipment

  • Pot
  • Wooden spoon

Ingredients
  

  • cups Yellow lentils soaked
  • ½ cup Egyptian rice soaked
  • 2 pcs Onion medium
  • tbsp Olive oil
  • 1 tbsp Salt

Instructions
 

Preparation Instructions

  • Wash the yellow lentils and the rice well, until you notice clear water.
  • Soak the lentils and rice in warm or hot water for 30 minutes at least
  • Mince the onion.

Cooking Instructions

  • To a pot, add the olive oil and the onion.
  • Stir until the onion becomes brownish.
  • Add the soaked rice and lentils mixture.
  • Add 1.5 liters or 8 cups of water.
  • Close the pot until they boil.
  • After boiling, lower the heat and simmer.
  • Check on them now and then to stir the mixture.
  • Add the salt when the water disappear and mix well.

Notes

Important tip at the end.
Whenever you feel it needs water, add some boiled water.
Mujaddara Safra may take two hours to be done and maybe less. It depends on the yellow lentils you are using.
It is for lazy cooks and busy days where you can multitask when it comes to cooking. My husband and I love eating it with the usual green salad; they are delicious together! You can also try it with some pickles if you love this salty taste.
You can also eat Mujaddara on winter days; it will let you feel warm.
